Here we interview Kayla Cappiello, who is a gluten and allergy-friendly blogger who also works in fashion. She also has a following of over twenty thousand on her Instagram page where she shares her life, healthy hacks, quick recipes, and tips on how to navigate food allergies.
5 QUESTIONS WITH KAYLA CAPPIELLO
1. Tell us about yourself and your food allergies. What is your #AllergyAdventure?
"I am gluten free, lactose intolerant and allergic to tree nuts. I found out I was allergic to tree nuts early on in high school so I’m very used to it. But the lactose intolerance and gluten intolerance I found out about approximately 5 years ago. My dad got diagnosed with celiac disease and since it’s heredity, and I was having such similar symptoms to him, I got tested and did in fact have the gene for it so the pieces kind of came finally after years of feeling off."
2. What advice can you give someone who has just been diagnosed with food allergies?
"Just be honest! Be honest with how your feeling, if you’re upset, if you’re frustrated. Tell your significant other. Tell your family. Tell your friends. You didn’t choose your allergy adventure. Your allergies chose you and it’s ok to need support."
3. What inspired you to become an allergy blogger?
"I felt really lonely when I was first diagnosed. It was really isolating. I really loved to cook and be in the kitchen but once I was diagnosed I felt like no recipes were suited to people like me. Sure there were gluten free recipes, but a lot had almonds or almond flour, which I couldn’t eat. It’s hard to find recipes that accommodate for more than one allergy or intolerance so I wanted to give that to other people like me!"
4. You have created so many delicious, allergy-friendly recipes. What is your favorite one and why?
"For sure any kind of pizza! I love pizza and the toppings are endless. I’m into gluten free crusts, using vegan cheeses, bbq sauce, buffalo sauce, chicken, veggies, greens. You name it and I can make it into a pizza!"
5. What is your favorite Blake’s Seed Based product and why?
"Definitely the rice crispy treats. I feel like it was so nice to be able to buy rice crispies for a long time and it was such a low blow when they stopped producing them gluten free, so it’s such a treat to find yours!!"
